Vegan tacos with ground 'meat'
Happy New Year! Just recently I tried vegan tacos (twice in one week) and I have to say, they're absolutely amazing. A lot of people probably assume that vegan meat is made of tofu but this meat is made from walnuts. I love tacos a lot but honestly, I realized that it wasn't the ground beef that I craved it was the flavour. I promise that you won't miss the meat. You might even be able to trick an unsuspecting meat-lover into thinking that it's ground beef- I'm serious. I love being able to cook for my friends and family and that often involves making adaptations to suit everyone's dietary needs. This is something that I've always loved to do, it challenges me and forces my cooking skills to the next level. In 2016 I'm going to try to add some more vegan recipes, as I try to find new ways to eat clean whenever possible!
Ingredients:
1 1/2 cups ground walnuts
2 tablespoons refried beans
1 1/2 teaspoons ground cumin
3/4 teaspoon ground coriander
2 tablespoons tamari or soy sauce
Directions:
1. In a medium saucepan, combine walnuts, refried beans, cumin, and coriander. Mix well.
2. Add tamari or soy sauce and mix well until heated through. Serve on tacos with your favourite fresh toppings.
